You reach into the pantry for your honey and instead of smooth, golden honey, you find a bottle that’s cloudy, thick, grainy, or almost completely solid.

Did it go bad?

Nope.

Your honey crystallized, and that’s normal. In fact, raw honey is especially likely to crystallize over time.

The harder question is how to turn it back into liquid honey. That’s where the usual advice gets a little too simple.

Why Does Honey Crystallize?

Honey contains natural sugars, mostly glucose and fructose, along with a small amount of water. There is more sugar in honey than that small amount of water can hold forever.

Eventually, some of the glucose starts to separate from the water and form tiny crystals. Once those crystals get started, more glucose can attach to them.

Slowly, the crystals spread through the bottle. Your honey may become cloudy first, then thick, and eventually it may look almost solid.

Nothing is wrong with it.

It’s still honey.

Why Does Some Honey Crystallize Faster?

This is one of the interesting things about real honey. Two bottles can sit in the same pantry and behave completely differently. The biggest reason comes down to two natural sugars in honey: glucose and fructose.

You may also hear glucose called dextrose. They’re the same sugar. Glucose doesn’t stay dissolved in water as easily as fructose does, so as honey sits, some of that glucose can come out of the liquid and form crystals. Once those first crystals appear, more glucose can attach to them and the crystallization spreads.

That means honey with more glucose tends to crystallize faster, while honey with more fructose compared with glucose can stay liquid much longer. Sometimes much, much longer.

That’s because the flowers the bees visit change the natural makeup of the honey. Different nectar sources produce honey with different amounts of glucose, fructose, water, and other sugars. In general, the more fructose there is compared with glucose, the longer the honey tends to stay liquid.

But sugar isn’t the whole story. The amount of water in the honey matters too. Glucose needs water to stay dissolved, so honey with a lot of glucose and relatively little water is more likely to form crystals.

Tiny natural particles in raw honey, including pollen, can also give those first crystals a place to form. That’s why there isn’t a simple expiration date for liquid honey.

One batch may crystallize in a few months, while another may stay liquid for years. Neither one is better or worse. They’re simply different honeys.

Is Crystallized Honey Still Good?

Yes. Crystallized honey has not spoiled just because it became solid.

You can eat it exactly as it is, and some people actually prefer it. Crystallized honey stays put on toast and biscuits instead of running down your hand.

You can stir it into oatmeal, yogurt, coffee, or tea. You can also use it in recipes just like liquid honey.

But sometimes you want a squeeze bottle to squeeze again.

That’s when things get trickier.

How Do You Decrystallize Honey?

You’ve probably heard this advice: put the bottle in warm water and wait for the crystals to disappear.

That advice isn’t wrong. It’s just not the whole story.

If your honey has only started to crystallize, warm water may work fairly quickly. If you have a one-pound bottle that has turned into a solid block of honey, that’s another story.

It can take a long time.

Sometimes a very long time.

Why Doesn’t Warm Water Work Faster?

Honey is thick, so heat has to slowly travel from the outside of the bottle toward the center. That means you can have warm, liquid honey around the edges while the middle is still packed with crystals.

And here’s another catch. If you don’t melt all those crystals, the honey may crystallize again sooner because the crystals left behind give new ones a place to start.

That’s why a heavily crystallized bottle needs more than a quick dip in warm water. It needs enough warmth for enough time to reach the honey in the middle.

There isn’t a magic shortcut around that.

The Gentle Way to Decrystallize Honey

We recommend using a warm water bath. Place your bottle or jar in a pan of water and warm it gradually.

If you’re using the stove, keep the heat low. Don’t bring the water to a rolling boil.

Then give it time.

As the honey warms, you’ll start seeing liquid honey form around the outside. If the honey is in a wide-mouth jar, stirring it can help spread the heat and break up the crystals.

A lightly crystallized jar might come back fairly quickly. A completely crystallized bottle can take much longer.

That’s normal.

What About Putting Honey in the Sun?

This one sounds great in theory.

We’ve tried it.

And yes, sunlight can warm honey. But don’t expect an 85-degree summer day to magically turn a solid bottle of honey back into liquid.

The outside may soften while the middle stays crystallized. You may need to leave it somewhere warm for hours, and in some cases you may need to repeat the process the next day.

So the sun can help. It’s just not the quick fix people sometimes make it sound like.

Be Careful With Plastic Honey Bottles

Here’s another problem that doesn’t get talked about enough.

Most people don’t buy their honey in heatproof glass jars. They buy it in plastic bottles.

The hotter your water gets, the faster the honey will liquefy. But very hot water can also soften or deform some plastic bottles.

That’s not a tradeoff we recommend making.

Don’t drop a plastic honey bottle into boiling water. Use gentler heat and give it more time.

If your honey is in glass, you have more flexibility. Just avoid taking cold glass and suddenly placing it into extremely hot water.

Why Not Just Turn Up the Heat?

Because heat is a tradeoff.

More heat will melt the crystals faster, but raw honey is a natural food, and some of its enzymes and other compounds are sensitive to heat.

That doesn’t mean honey suddenly becomes “bad” at one exact temperature. It doesn’t work that way.

Heat changes honey based on both temperature and time. A little heat for a short time is different from holding honey at a high temperature for a long time.

That’s why we prefer gentle heat when we’re trying to reliquefy honey. But we’re also not going to tell you that a rock-solid bottle of honey will become perfectly liquid after ten minutes in lukewarm water.

It probably won’t.

The lower the heat, the more patience you’ll need. The higher the heat, the faster the honey will liquefy.

That’s the real-world answer.

What About Putting Honey in Hot Coffee or Tea?

We hear this question a lot:

“If heat affects raw honey, am I ruining it when I put it in hot coffee?”

Not exactly.

Some of honey’s natural enzymes are sensitive to heat, so very hot coffee or tea may reduce some of that enzyme activity. But honey doesn’t suddenly lose everything that makes it honey the moment it hits a hot drink.

Temperature matters, and time matters too.

There’s a big difference between heating an entire bottle for a long period and stirring a spoonful of honey into a cup of coffee that’s already cooling.

If keeping as much of honey’s natural enzyme activity as possible matters to you, there’s an easy solution: let your coffee or tea cool a little before adding your honey.

If you’re just looking for a natural way to sweeten your morning coffee, go ahead and enjoy it.

Your spoonful of honey hasn’t suddenly become worthless because you put it in a hot drink.

Do You Even Need to Decrystallize It?

Maybe not.

This part often gets overlooked. Crystallized honey isn’t damaged honey.

If you don’t need it to squeeze from a bottle, you can scoop it out and eat it exactly as it is. Spread it on toast, add it to biscuits, stir it into oatmeal, mix it into yogurt, sweeten your coffee, or use it in a recipe.

Sometimes the easiest way to deal with crystallized honey is to stop fighting it.

You may even decide you like the thicker texture.

Can You Stop Honey From Crystallizing?

Not completely.

You can slow it down, but raw honey may eventually crystallize no matter what you do. Keep your honey tightly closed and store it at normal room temperature.

Skip the refrigerator.

And don’t be surprised when different bottles behave differently. One batch of wildflower honey may stay liquid for a long time, while another may start crystallizing much sooner.

The bees collected nectar from different flowers at different times of the year. The makeup of that honey changes along with it.

That’s one of the things we love about real honey.

It isn’t manufactured to be exactly the same every time.

The Bottom Line

So, why does honey crystallize?

Because honey is naturally packed with sugar, and some of that sugar eventually forms crystals.

It doesn’t mean your honey spoiled. It doesn’t mean it’s old. And it doesn’t mean you need to throw it away.

If you want it liquid again, warm it slowly and be patient. If you don’t mind the texture, scoop it out and enjoy it exactly as it is.

And if somebody tells you a completely crystallized bottle will always turn perfectly liquid after a few minutes in lukewarm water?

They may have never actually tried it.
