Not all honey tastes the same, and our Japanese Knotweed Honey is a perfect example of just how much the flowers bees visit can change what ends up in the jar.

Produced during the late-season bloom of Japanese knotweed, this honey is noticeably darker than our traditional wildflower honey with a rich, full-bodied sweetness and a distinctive molasses-like flavor. It is deeper and more robust than a light floral honey, making it a great choice for anyone who enjoys exploring different varietal honeys or simply wants something a little different from the everyday honey in the cupboard.

What Does Japanese Knotweed Honey Taste Like?

Our Japanese Knotweed Honey has a dark, rich flavor with a noticeable molasses-like character. The sweetness is still unmistakably honey, but it has more depth than the bright, floral flavor you may expect from traditional wildflower honey.

Because honey is a natural product, every harvest can be a little different. Weather, growing conditions, bloom timing, and the other flowers available to the bees can all influence its color and flavor. That variation is part of what makes seasonal honey so interesting.

Japanese Knotweed Honey Comes Straight From the Bloom

This isn’t flavored or infused honey. The color and flavor come naturally from the nectar the bees gather while Japanese knotweed is blooming.

Japanese knotweed produces clusters of small flowers in late summer that can become an important nectar source for honey bees. When the bees work those blooms, that nectar eventually becomes a distinctly dark honey with a flavor all its own.

That means there is no molasses added to this honey. The molasses-like flavor comes naturally from the floral source.

A Dark Honey for More Than Just Tea

You can use Japanese Knotweed Honey anywhere you would normally reach for honey, but its stronger flavor makes it especially good when you want the honey to stand out instead of disappearing into the background.

  • Drizzle it over biscuits, toast, pancakes, or waffles.
  • Stir it into hot tea or coffee.
  • Pair it with sharp or aged cheeses.
  • Add it to marinades, sauces, and glazes.
  • Use it in baking where a deeper honey flavor works well.
  • Or enjoy a spoonful straight from the jar to experience the flavor on its own.

Why Is Japanese Knotweed Honey Seasonal?

Japanese Knotweed Honey depends on the bloom and what our bees are able to gather during that part of the season. Unlike a honey that can simply be made again whenever inventory gets low, each harvest depends on the bees, the weather, and the flowers available to them.

For that reason, we consider this a seasonal honey. We will offer it while this harvest lasts, and availability from one season to the next may vary.

A Different Side of Honey

If most of the honey you’ve tried has been light, golden, and floral, Japanese Knotweed Honey is an opportunity to taste something completely different. Its dark color and rich molasses-like character show just how much a floral source can influence the honey the bees produce.

It’s still pure honey. The bees just did things a little differently this time.
